Recipe of the Week: Gluten-Free Chocolate-Cherry Cupcakes

today, i'm celebrating my 20-something-th birthday. to celebrate, brandon made me insanely delicious gluten-free chocolate-cherry cupcakes. they're so good, i had to share the recipe with you all (and the good news is they're simple to make, too)!





gluten-free chocolate-cherry cupcakes

makes 16 regular sized cupcakes


cake ingredients:




frosting ingredients:

  • 1 tablespoon butter
  • 1/8 cup sweetened coconut flakes
  • 2 cups confectioners sugar
  • 3 tablespoons unsweetened almond milk 
  • 1 tsp orange extract
  • 1 tsp pure vanilla extract

too good to eat just one!


to make the cupcakes: 

Mix wet ingredients well in a mixer. Once well mixed (no clumps), gradually add cake mix and combine until smooth like pudding. 


Distribute evenly into cupcake tins and bake for 18-20 minutes at 325 degrees.

to make the frosting:

Mix all ingredients in mixer until thick like frosting. (FYI - This could have easily been made with 1 1/2 cups confectioners sugar, but we like our frosting extra sugary. Feel free to reduce as desired). :)

  1. I still have a bunch in my fridge. Given the weather is so cold, you think if I sent them First Class mail, they'd stay cold enough to get to you in time?

  2. I'm not sure... I know baked goods travel, I just don't know because of the eggs..
