Recipe of the Week: Lime-Pepper Asparagus




summertime in michigan means its asparagus season and boy, can our soil grow some good asparagus! this recipe is my favorite way to prepare asparagus. i serve it chilled, but you could use the recipe as a marinade and grill your asparagus instead. that would be insanely tasty, too (if you haven't tried grilled asparagus, now is your chance)! 


Lime-Pepper Asparagus
Servings: 6 (5 asparagus stalks per serving)
Weight Watchers Points+: 1 point per serving!

- a bunch of asparagus (30 stalks is what i used)
- olive oil
- white balsamic vinegar
- 1 lime (juiced)
- salt
- ground black pepper


if you want to serve your asparagus chilled, like i do, you'll need to steam your asparagus first.



while the asparagus is steaming, mix the marinade in a small bowl (or a long tupperware, which you'll need anyway to chill the asparagus). you'll notice i didn't include measurements in the ingredients list. that's because i have no way of knowing how many stalks of asparagus you'll be using, and the amount of olive oil and vinegar you'll need varies depending on the amount of aspragus you have. i use a 1:2 ratio, white balsamic vinegar to olive oil. if you really like the taste of vinegar, you could do a 1:1 ratio. for my 30 stalks of asparagus, i used 2 tablespoons olive oil and 1 tablespoon vinegar. combine those two ingredients with your fresh lime juice. i use a whole lime because i like my flavor to be extra limey, but if you want a lighter lime taste, use the juice of 1/2 the lime. finally, add in the salt and pepper. i do a teaspoon of both, but again, you can add more to suit your taste buds.




once your asparagus is done (i steam mine until its still a little bit crunchy), put it in a long tupperware container and pour in your marinade.




when everything is in the tupperware, place the lid on and shake it up baby! you want your little asparagus stalks covered in marinade goodness.

once you're satisfied with the shaking, place in the fridge or freezer. fridge if you have a few hours before serving, freezer if you've only got 30 minutes to an hour before serving. half way through chill time, take the container out and give it some good shakes to stir it up a bit and make sure your asparagus is still soaking in the flavor.

your asparagus is ready to go when it's chilled - serve it up and enjoy!
