recipe of the week: personal pita pizzas

sometimes, there is nothing better than pizza. but its not so great when one slice can run 5-13 points! my boyfriend brandon was inspired by a weight watchers recipe and created these awesome personal pita pizzas. my veggie version was only 6 points, and i got the satisfaction of being able to eat the whole thing. what i really like about this recipe, is that the pita, when baked, makes the perfect thin crust - nice and crispy. plus, we got all the ingredients for about $12, and one pack of pitas contains about 7 - so you can get 7 meals really, really cheap!!

yields: 1 pizza
weight watchers+ points: 6 (for veggie, as prepared below)

- 1 large whole wheat pita
- 1/8 cup tomato paste (seasoned with your preference of seasonings, this recipe used fresh basil)
- 1/4 cup diced portabella mushroom
- 1/4 cup diced green pepper
- fresh spinach 
- 1/4 cup low-fat shredded mozzarella cheese

preheat the oven to 375. layout your pita, and spread on the tomato paste. to add flavor to the tomato paste, stir in your favorite italian seasonings. brandon used fresh basil in a food processor to add some pizzaz and flavor. 

after your tomato paste is spread around, top with your veggies! i recommend putting the spinach leaves down first, and then sprinkling your veggies on top. brandon made homemade turkey pepperoni by using ground turkey (seasoned), and pressing it super lean in between parchment paper.

finally, when all your toppings are settled in, add your cheese. 1/4 cup of cheese may not look like much, but its enough to add flavor (without adding too many points)! 

when you're ready to bake, pop into the oven for 20-22 minutes. your pizzas will be done when the pita is nice and crispy, and the cheese is melted!
