Recipe of the Week: Fiesta BBQ Shredded Pork






behold, a barbecue shredded style pork that won't put you in point overload. this version has a mexican style twist - hence the name "fiesta bbq" - that is perfect for tacos, tortillas or enchiladas. you could slop this stuff on a bun, but it really has a taste that is designed for south of the border enjoyment (meaning, get out your skinny margarita and guacamole)! want to know the best part? one serving of this yummy goodness is only 1 point! yes, i'm serious. 1 point. drooling yet? scroll down for the recipe, including the tortilla wrap brandon and i had for dinner for a total of 4 points each. two of these tortillas wraps was the most satisfying 10 points i've had on weight watchers thus far (no lie)!



fiesta bbq shredded pork
yields: 14 servings (each serving is 1/4 cup)
weight watchers+ points: 1 point per serving

- 1 pound pork loin roast
- 1 1/2 onions, chopped
- 4 garlic cloves, minced
- 4 oz can fire-roasted green chilies, diced
- 2 tsp chili powder
- 1/2 cup taco sauce (i used taco bell's mild restaurant sauce)
- 1/2 cup barbecue sauce (i used annie's naturals original)
- salt
- pepper

*note* this recipe prepared as-is packs some serious heat. if you don't want your dish on the spicy side, cut the chili powder and green chilies in half (or don't use any chilies). you can also use non fire-roasted green chilies, which tend to be more mild.




you'll need a crock pot for this recipe. so quick, go get it out before you read any further.

once you have your beloved crock pot, combine all the ingredients except the pork and put into your pot. season your pork with the salt and pepper, and then put in the crock pot. cook on low for 8-10 hours. if you can't wait 8-10 hours, you can also cook on high for 6 hours.

when the pork is tender, shred it up. pull the pork apart until it fills your crock pot with lots of little porky pieces. when the loin is completely shredded, cook on high for another 30 minutes.

after that 30 minutes, your fiesta bbq shredded pork is ready to serve and eat! one serving is 1/4 cup - see below if you are skeptical about the serving size being enough to satisfy (it is).

yields: 1 tortilla wrap
weight watchers+ points: 4 points per serving


- 1/4 cup fiesta bbq shredded pork
- 1 tortilla (sante fe tortilla company, whole wheat)
- 1/6 cup shredded rice cheese
- mango salsa




1/4 cup serving of pork may not sound like a lot, but trust me, it is the perfect serving size and more than enough to feel satisfied. i used rice cheese due to my dairy intolerance, so using a regular cheese will probably add more points. top with mango salsa (such a good pairing here) and you're good to go! i warmed my tortillas up in the oven for about 10 minutes at 170 degrees before serving.
